Fluffy Strawberry Pancakes

Want a perfect recipe to give to your little one for breakfast? You've come to the perfect place. This recipe is easy and quick. I'm sure you'll like it, and your little one will love it. This recipe is suitable for children 6 months and older as long as allergens (egg, dairy, and gluten) have been introduced.

Prep time: 10 min.

Cook time: 5-2 min. Servings: Depending on how you shape them, this recipe yields about 6 pancakes. Storage: For approximately 3 days in the refrigerator.
How to offer:
  • 6–8 months, offer pancakes cut into strips that are 2 fingers wide and 1 finger long.

  • 9 months and older, offer pancakes in stripes as before or cut into bite-sized pieces when using a pincer grasp;

Tip: Remember that babies will eat in different amounts, so begin with 1-2 tablespoons of food and increase as you become familiar with your baby's signals of hunger and fullness.

Ingredients:
  • 1 cup of plain Greek yogurt

  • 1 egg

  • 1/3 cup of date paste( or maple syrup )

  • 2 tablespoons of oil ( of your choosing)

  • 1/2 teaspoon of vanilla

  • 1/2 cup of oat flour

  • 1/2 cup of all-purpose flour

  • 1/2 teaspoon of baking soda

  • 1 teaspoon of baking powder

  • 1/3 cup of chopped strawberries

  • Strawberries for garnishing (optional)

Directions:

1. Add the egg to a medium bowl and beat it.

2. Add the remaining wet ingredients, including the yogurt, date paste, oil, and vanilla, and whisk to combine.

3. Add the dry ingredients in the specified order, and then gently fold everything together until it's just combined—avoid overmixing.

4. Slice the strawberries, then carefully incorporate them into the batter.

5. Put a nonstick griddle or frying pan on low to medium heat. Pancake batter should be added after greasing the pan. A medium cookie scoop is an additional option.

6. When bubbles appear on the top and the bottoms begin to brown, flip the pancakes (1-2 min.). Golden-brown the other side of the food (1-2 min.).

7. You can use a cookie cutter to create various shapes after they've slightly cooled.

8. If you'd like, slice the remaining strawberries into heart-shaped slices to use as a garnish.

9. Present warm with your preferred garnish (yogurt, butter, nut butter, jam, etc.).
