Pancake-muffin with Fruits

This recipe has saved me a lot of time and effort. It's easy to make and tastes great. My son loves it so much, and it can be eaten for breakfast or as a snack.

Prep time: 10 min. Cook time: 5-8 min. Ready in: 15-18 min.

Ingredients needed:

• 1 egg

• 1 cup of plain yogurt

• 1/3 cup of date paste

• 2 tablespoons of oil (canola oil or any other oil you like)

• 1/2 teaspoon vanilla

• 1/2 cup of oat flour

• 1/2 cup of all-purpose flour

• 1/2 teaspoon of baking soda

• teaspoon of baking powder

• About 10 small strawberries, chopped into half a cup

• Strawberries to decorate (optional)

Directions:


1. Put the egg in a medium-sized bowl and whisk it.

2.Add the yogurt, date paste, oil, and vanilla, along with the other wet ingredients, and mix them all together with a whisk.

3. Add the dry ingredients in the order given and mix them in slowly, being careful not to mix them too much.

4. Cut the strawberries up and mix them slowly into the batter.

5. Set a griddle or cooking pan that doesn't stick on low to medium heat.You can use a medium cookie scoop or grease the pan and pour the pancake batter in.

6. Flip the pancakes over when the tops start to bubble and the bottoms begin to brown (about one to two minutes). Cook the other side until golden brown (about one to two minutes).

7. You can use a cookie cutter to make different forms after they've cooled a bit.

8. If you want, you can use the heart-shaped pieces of strawberries that are left as a garnish.

9. Serve warm with any topping you like, like yogurt, butter, nut butter, jam, etc.

10. This recipe makes about six 4-inch pancakes, but it depends on how you form them.

Storage: It can be kept in the fridge. Keeping it: It will last about three days in the fridge.

Suitable from: 6 months+, as long as allergens like gluten, egg, and dairy have been introduced.

How to offer: With palmar grasp (around 6-8 months), offer pancakes cut into strips 2 fingers-wide and 1 finger-long. with pincer grasp (around 9 months +), offer pancakes in strips as before or cut into bite-size pieces.

Kids eat different amounts, so start with 1-2 tablespoons of food and add more as you learn your baby's signs for when he or she is hungry or full.
